The Beet and Goat Cheese Salad has a delightful balance of flavors that sets it apart. What You’ll Need

  • 3 medium sized beets
  • 1/2 cup of goat cheese
  • 1/2 cup of walnuts, chopped
  • 6 cups of mixed greens
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of lemon juice
  • 2 tablespoons of balsamic vinegar
  • Salt and black pepper to taste

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Take the 3 medium sized beets and wrap them loosely in aluminum foil. Place on a baking sheet and roast in the oven for around 1 hour, or until the beets are tender and can be easily pierced with a fork. Remove from the oven and let them cool.

Step Two

While the beets are cooling, start preparing the salad dressing. In a small bowl, combine the 1/4 cup of extra virgin olive oil, 2 tablespoons of lemon juice, 2 tablespoons of balsamic vinegar. Season with salt and black pepper according to taste, and whisk until well combined.

Step Three

Once the beets are cool enough to handle, use a paper towel to rub off their skin. Cut the beets into slices or wedges, according to your preference.

Step Four

In a large salad bowl, add the 6 cups of mixed greens. Scatter the sliced or wedged beets over the greens. Crumble the 1/2 cup of goat cheese over the salad, and then sprinkle the 1/2 cup of chopped walnuts on top.

Step Five

Drizzle the prepared dressing over the salad, and then gently toss until all the ingredients are combined and coated in the dressing. Serve the salad immediately, or keep it in the refrigerator until ready to serve.
