What You’ll Need

  • 1 & 1/2 cups of sorrel leaves, washed and chopped
  • 1 & 1/2 cups of spinach, washed and chopped
  • 1 deep dish pie crust (9 inches)
  • 1 cup of half-and-half cream
  • 3 large eggs
  • 1/2 cup of grated Swiss cheese
  • 1 small onion, diced
  • 1 tablespoon of unsalted butter
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
ALLERGENS: Gluten (pie crust), Dairy (half-and-half cream, Swiss cheese, butter), Eggs

Method

Step One

Preheat your oven to 375 degrees Fahrenheit. Place your pie crust into a oven-safe dish. Prick the bottom and sides with a fork and bake for 10 minutes until just lightly golden. Once done, remove from the oven and let it cool.

Step Two

In a large pan, melt the butter over medium heat. Add diced onions and sauté until they become soft and translucent. In the meantime, wash and chop the sorrel leaves and spinach.

Step Three

Add the chopped sorrel and spinach to the pan with onions. Sauté until the leaves have wilted and the liquid has evaporated. This should take about 5 minutes. Once done, remove from the heat and allow it to cool slightly.

Step Four

In a mixing bowl, combine the half-and-half cream, eggs, salt, and pepper. Beat the mixture until the eggs are well incorporated and the mixture is smooth.

Step Five

Spread the sautéed greens and onions evenly across the bottom of the cooled pie crust. Pour the egg and cream mixture over the top, making sure it extends up to the edges of the crust.

Step Six

Sprinkle the grated Swiss cheese evenly over the top. Place back in the preheated oven and bake for 35-40 minutes or until the quiche is set and the top is golden brown.
