What You’ll Need

  • 6 cups of chicken broth
  • 3 stalks of fresh lemongrass
  • 1 inch of fresh galangal, sliced
  • 10 kaffir lime leaves
  • 2 bird’s eye chilies, chopped
  • 2 boneless chicken breasts, thinly sliced
  • 1 cup of straw mushrooms, halved
  • 1 medium tomato, diced
  • 2 cups of fresh pineapple chunks
  • 1 medium onion, thinly sliced
  • 2 tablespoons of fish sauce
  • 1 lime, juiced
  • 1 tablespoon of sugar
  • 1 cup of canned, unsweetened coconut milk
  • Fresh cilantro leaves for garnish

Method

Step One

Begin by preparing your ingredients. Slice your lemongrass stalks into 2-inch long pieces and crush them lightly to release their flavor. Cut the galangal into slices, chop your bird’s eye chilies, thinly slice the chicken breasts and onion, dice the tomato, and half the straw mushrooms.

Step Two

In a large pot, bring the chicken broth to a boil. Add the lemongrass, galangal, kaffir lime leaves, and bird’s eye chilies. Lower the heat slightly and let it simmer for about 20 minutes. This allows the flavors to infuse into the broth.

Step Three

After 20 minutes, using a slotted spoon or a strainer, remove the lemongrass, galangal, lime leaves, and chilies from the soup.

Step Four

Next, add the sliced chicken, straw mushrooms, diced tomato, pineapple chunks, and sliced onion to the broth. Simmer for 10-15 minutes, or until the chicken is cooked and the vegetables are tender.

Step Five

Stir in the fish sauce, lime juice, and sugar. Then, pour in the coconut milk, stirring well to combine. Let the soup simmer for another 5 minutes.

Step Six

Taste the soup and adjust the seasoning if necessary. You might want to add a bit more fish sauce, lime juice, or sugar, depending on your preference.

Step Seven
