What You’ll Need

  • 1.5 lbs of Yautia (also known as Taro root)
  • 2 tablespoons olive oil
  • 6 cloves of garlic, finely minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, finely chopped for garnish
  • 1 tablespoon fresh lemon juice
  • 1/3 cup vegetable broth

Method

Step One

Start by peeling the Yautia (Taro root) and cutting them into thick slices. Then rinse them thoroughly in cold water to remove any starch and pat dry them with a clean cloth.

Step Two

Preheat your oven to 400 degrees F (200 degrees C). Meanwhile, on the stovetop, heat the olive oil in a large oven-proof pan or cast-iron skillet over medium heat.

Step Three

Add the finely minced garlic to the heated pan and sauté just until it begins to brown. Be careful not to burn the garlic as it can give off a bitter taste.

Step Four

Now add your fresh rosemary, fresh thyme, salt and black pepper to the pan. Stir to combine everything and let these cook for about a minute to release their aromatic flavors.

Step Five

Add the sliced Yautia to the skillet and toss to coat them in the garlic and herb mixture. Let the Yautia cook for few minutes until they become golden brown.

Step Six

Pour the vegetable broth into the pan, and drizzle the fresh lemon juice over Yautia. Give everything a good stir to properly distribute the flavors.

Step Seven

Transfer the pan into the preheated oven, and roast for about 20-25 minutes or until the Yautia are fork tender and nicely browned.

Step Eight

Once the Yautia is roasted, sprinkle the finely chopped fresh parsley over top for garnish before serving. Your Yautia Horquetas Roast with Garlic and Herbs is ready to enjoy!
