Why I Love Mexican Fish Tostadas with Black Bean Salsa
One of my absolute favorite dishes to prepare and serve is the traditional Mexican recipe of Fish Tostadas with Black Bean Salsa. Being raised in Texas, I was fortunate to be engulfed in a rich culinary culture where Tex-Mex cuisine played a significant role. These aromas and flavors from my childhood have greatly influenced my passion for cooking, which I strive to translate into my recipes. This particular recipe holds a special place in my heart as it embodies a vivid representation of my beloved Tex-Mex heritage.
A Vibrant Canvas of Flavors
What I absolutely adore about Fish Tostadas with Black Bean Salsa is its harmonious blend of vibrant flavors. The delicate white fish fillets, when grilled in olive oil with a sprinkle of salt and pepper, become slightly smoky, tender morsels that melt in your mouth. A topping of black beans, refreshingly crunchy bell pepper, fiery jalapenos, and onions provide a delightful contrast. The fresh cilantro and lime do more than add a dash of color – they deliver a citrusy punch, zing up the whole dish, and balance the heat from the peppers. Finishing it off with creamy slices of ripe avocado, a sprinkle of crumbled queso fresco or feta cheese, and cool, crunchy iceberg lettuce not only adds another layer of texture but makes each bite a celebration of flavors.
A Nod To Accomplished Chefs
While creating this recipe, I found inspiration from the phenomenal Mexican chef, Rick Bayless. Known for his dedication and passion for traditional Mexican cuisine, Bayless’ influence is evident in this recipe, which is familiar yet full of surprising nuances.
Indeed, Fish Tostadas with Black Bean Salsa is a culinary delight that shares its roots with well-loved Mexican fare like Fish Tacos and Black Bean and Corn Salsa. From casual get-togethers to family dinners, it pairs well with a wide array of dishes. A good serving suggestion might be alongside Mexican Rice, Cilantro-Lime Chicken, or simply enjoyed with a cold Margarita.
Every bite of this dish delivers a gustatory experience that’s truly a joy for the senses. And this is why I can’t help but love this recipe!
What You’ll Need
- 6 oz. white fish fillets, like tilapia or cod
- 12 tostada shells
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 cups canned black beans, drained and rinsed
- 1 medium red bell pepper, diced
- 1 medium onion, diced
- 2 jalapeno peppers, seeded and finely chopped
- 2 cloves of garlic, minced
- 2 tbs. fresh lime juice
- 1/2 cup fresh cilantro, chopped
- 1 ripe avocado, sliced
- 1 cup queso fresco or feta cheese, crumbled
- 1 medium head of iceberg lettuce, shredded
Method
Step One
Season your white fish fillets with salt and pepper to taste. Afterwards, heat the olive oil in a large skillet. Once it’s hot, add the fish and cook each side for about 3 to 4 minutes until it’s flaky and cooked through. Set the cooked fish aside once done.
Step Two
While your fish is cooking, begin preparing your black bean salsa. In a large bowl, combine the rinsed black beans, diced red bell pepper, diced onion, finely chopped jalapeno peppers, minced garlic, and fresh lime juice. Stir everything together until well mixed.
Step Three
Add the chopped cilantro to your black bean salsa and stir to incorporate. Now your salsa is ready for serving.
Step Four
Next, prepare your tostada shells. You can either buy pre-made shells or make them yourself. If you choose to make your own, simply fry corn tortillas in a pan with a bit of oil until they’re crispy.
Step Five
It’s time to assemble your tostadas! Start by putting a layer of shredded iceberg lettuce on each tostada shell. Then, add some of the black bean salsa on top.
Step Six
Add the cooked fish to each tostada, followed by a couple slices of ripe avocado. Finish off your tostadas by sprinkling the crumbled queso fresco or feta cheese on top.
Step Seven
Serve your Fish Tostadas with Black Bean Salsa immediately. Enjoy this flavorful and healthy dish as a main course or appetizer!
