What You’ll Need

  • 3 lbs Rib-eye steak
  • 2 tbsp Cubeb pepper, freshly ground
  • 1 tbsp Kosher salt
  • 1 tbsp Garlic powder
  • 2 tbsp Brown sugar
  • 2 tbsp Olive oil
  • 1 cup Cherries, pitted
  • 2 Apples, sliced
  • 2 Oranges, sliced
  • 1 cup White wine
  • 1 tbsp Thyme, fresh
  • 1 tbsp Rosemary, fresh

Method

Step One

Mix together the freshly ground Cubeb pepper, Kosher salt, garlic powder, and brown sugar in a small bowl. This will serve as your rub for the steak.

Step Two

Take your Rib-eye steak and gently rub the mixture from step one on both sides. Ensure the steak is evenly covered. Allow the steak to sit and marinate for around 15 minutes.

Step Three

While the steak is marinating, heat up your grill to medium-high heat.

Lightly coat the steak with olive oil before placing it on the heated grill. You can grill the steak as per your liking, anywhere between 4-7 minutes per side for a medium-rare to well-done steak.

While the steak is grilling, start preparing the fruit topping. In a medium-sized pan, combine the pitted cherries, sliced apples, sliced oranges, and white wine. Cook this over medium heat until the fruits have softened and the wine has reduced by about half.

Step Six

Add the fresh thyme and rosemary to the pan. Stir the mixture and simmer till the sauce thickens.

Step Seven

Once the steak is cooked to your liking, remove it from the grill and let it rest for a few minutes before slicing into it. This allows the juices to redistribute throughout the steak.
