A Symphony of Flavors
When we talk about the Garbanzo Bean Pasta, what excites me the most is the perfect melody of flavors that the dish creates. The salty tang of Kalamata olives and feta cheese perfectly balances the freshness of tomatoes, bell peppers, and onions. Adding to that, the kick of garlic and the refreshing notes of basil and parsley composite a symphony of savory, tangy, and sweet flavors. This dish is like an ode to the Mediterranean salad with a delightful pasta twist.

Not only does this pasta dish score high on the taste front, but it’s also packed with nutritional benefits. The garbanzo beans, also known as chickpeas, are a great source of fiber and protein. Further, the use of Extra Virgin Olive Oil adds to the health quotient as it is known for its heart-friendly fats.
Goes without saying, food like this, that is both delicious and health-forward, is a staple in my kitchen. Moreover, this recipe could be perfectly paired with a crisp Greek Salad, or a loaf of crusty bread on the side for a wholesome meal.

What You’ll Need
- 16 ounces of Garbanzo Bean Pasta
- 2 cups of fresh tomatoes, diced
- 1 large bell pepper, diced
- 1 large onion, diced
- 1 cup of kalamata olives, pitted
- 2 cloves of garlic, minced
- 4 tablespoons of extra virgin olive oil
- 1 cup of feta cheese, crumbled
- 1/4 cup of fresh basil, chopped
- 1/4 cup of fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
- Juice of 1 large lemon
Method
Step One
Start by boiling a large pot of salted water. Once the water is boiling, add the Garbanzo Bean Pasta and cook according to the package instructions until al dente. When done, drain and rinse the pasta under cold water to stop the cooking process. Set aside.
Step Two
In a large pan, heat the extra virgin olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sautee them until they become soft and fragrant which usually takes around 5-7 minutes.
Step Three
Add the diced fresh tomatoes to the pan. Cook them until they become slightly soft but still retains some texture. This typically takes around 3-4 minutes. Then, add the pitted kalamata olives and stir them into the mixture.
Step Four
Reduce the heat to low and add the drained pasta to the pan. Mix well to ensure that the pasta is well incorporated with the other ingredients in the pan.
Step Five
Squeeze the juice from the large lemon over the pasta and stir well to combine. Add the chopped fresh basil and parsley and again mix well. Season the pasta with salt and freshly ground black pepper to taste.
Step Six
Remove the pan from heat and sprinkle the crumbled feta cheese over the pasta. Allow the dish to sit for a few minutes before serving, this allows the flavors to meld together. Serve warm or at room temperature and enjoy your Garbanzo Bean Pasta!
