What You’ll Need

  • 4 large Oranges
  • 1 cup of white Sugar
  • 3 cups of Water
  • 1 tablespoon of Orange Zest
  • 1 tablespoon of Lemon Juice
  • 2 tablespoons of Mastic Gum (crushed)
  • 1/2 packet of unflavored Gelatin (about 1.5 teaspoons)

Method

Step One

Start by zesting one of the oranges and squeezing out its juice. Put the orange zest in a bowl and set aside. Next, squeeze out the juice from the remaining oranges and combine it with the orange zest.

Step Two

Put the water, sugar, orange zest and juice, and lemon juice into a saucepan. Stir everything together until the sugar is completely dissolved. Bring the mixture to a boil over a medium to high heat.

Step Three

Once the mixture is boiling, reduce the heat and let it simmer gently for about 20 minutes. During this time, mastic gum should be crushed into a powder.

Step Four

After simmering, add the crushed mastic gum to the saucepan and stir well to combine. Continue to cook and stir the mixture for about 10 minutes more, or until the mastic gum is thoroughly dissolved.

Step Five

Now, mix the gelatin with a small amount of cold water in a bowl. Stir until the gelatin has absorbed the water and a thick paste has formed.

Step Six

Add the gelatin paste to the simmering saucepan and stir continuously until the gelatin is fully dissolved and evenly distributed.

Step Seven

Remove the pan from the heat and let the mixture cool slightly. Then pour the liquid jelly into serving dishes or a jelly mould. Let the jelly cool completely before placing it in the refrigerator for at least 4 hours to set completely.
