  • 2 cups Basmati rice
  • 1 tablespoon vegetable oil
  • 2 teaspoons grated zedoary
  • 1 can (13.5 ounces) coconut milk
  • 3 cups water
  • 1 teaspoon salt
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup chopped fresh mango
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice

Method

Step One

Rinse the Basmati rice under cold water until the water runs clear. Once rinsed, drain the rice and set it aside.
