What You’ll Need
- 3 large sweet potatoes, peeled and diced
- 2 cans (15 ounces each) of chickpeas, drained and rinsed
- 1 large onion, finely chopped
- 4 cloves of garlic, minced
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of cumin
- 1/2 teaspoon of chili powder
- 1 can (15 ounces) of coconut milk
- 4 cups of vegetable broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 2 cups of basmati rice
- 4 cups of water for cooking rice
- 6 pieces of naan bread
- 2 cups of plain yogurt
- 1/2 cup of fresh cilantro, chopped
- 1 tablespoon of lemon juice
Method
Step One
Start by preparing your ingredients. Peel and dice the sweet potatoes, drain and rinse the chickpeas, finely chop the onion, and mince the garlic. Measure out your spices, curry powder, turmeric, cumin, and chili powder. Set all these aside.
Step Two
