What You’ll Need
- 6 Fresh ackee fruits or 1 can of prepared ackees
- 2 cups of diced bacon
- 12 slices of bread
- 2 tablespoons of vegetable oil
- 1 medium onion, finely chopped
- 1 medium bell pepper, finely chopped
- 1 medium tomato, diced
- 1 finely chopped scotch bonnet pepper (optional)
- 6 sprigs of fresh thyme or 2 teaspoons of dried thyme
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 6 slices of cheddar cheese (optional)
- Mayonnaise or preferred sandwich spread, to taste
Method
Step One
If you’re using fresh ackee fruits, first, remove the seeds and the red tissue from each fruit, ensuring only the yellow flesh remains. Rinse them in cold water. If you’re using canned ackees, you can simply drain them and set aside.
Step Two
Heat up oil in a large frying pan over medium heat. Once the oil is hot, add the diced bacon into the pan. Cook until it becomes crispy, stirring occasionally. This should take about 5-7 minutes.
Step Three
Add the finely chopped onion, bell pepper, tomato and optional scotch bonnet to the pan. Stir together with the bacon. Cook these together until the vegetables become soft; this should take about 3-5 minutes.
Step Four
Add the prepared ackee, thyme, black pepper, and salt into the pan. Mix well, ensuring all ingredients are well combined. Reduce the heat to low and continue to cook the mixture for another 5 minutes, stirring occasionally.
Step Five
While the ackee and bacon mixture is cooking, you can prepare your bread. If desired, toast the bread slices lightly. Spread your preferred amount of mayonnaise or sandwich spread on one side of each slice.
Step Six
When both your bread and ackee mixture are ready, distribute the ackee and bacon evenly across 6 slices of the prepared bread.
