Ahipa Mashed with Garlic

The Ahipa Love Affair

Ahipa, also referred to as jicama, coyote or yam bean, is a personal favorite and a core ingredient in this recipe. Its high dietary fiber contents not only add to the chunky texture of this dish, but also promote better digestion and weight management. Paired with the antioxidant-packed garlic, this fusion dish proves that a flavor-packed meal doesn’t have to compromise on health benefits. Moreover, the hint of garlic adds a layer of complexity to this dish that ensures every bite is a pleasant surprise for your taste buds.

Pair it Up

Just like mashed potatoes or garlic mashed potatoes, Ahipa Mashed with Garlic is versatile and pairs well with a variety of main meals. Whether it’s a sizzling steak, grilled vegetables or even tandoori chicken, this side dish fits right in, adding its distinct charm to the overall meal. If you’re following a vegetarian diet or trying to incorporate more veggies in your meals, this recipe will be a delightful addition to your menu. What You’ll Need

  • 3 large Ahipa roots
  • 6 cloves of Garlic
  • 3 tablespoons Unsalted butter
  • 1/4 cup Whole milk
  • Salt to taste
  • Pepper to taste
  • 1 bunch of Fresh parsley (optional)
ALLERGENS: Garlic, Milk, Butter

Method

Step One

Start with washing the ahipa roots thoroughly. Peel them and cut into smaller chunks. This will help them to cook faster and more evenly.

Step Two

Place the peeled and chopped ahipa in a large pot and fill it with enough water to cover them. Then put it on the stove over high heat.

Step Three

Once the water starts boiling, reduce the heat to medium-low and let the ahipa simmer for 20-30 minutes, or until they are easily pierced with a fork.

Step Four

While the ahipa is cooking, peel the garlic cloves and mince them. Set aside for later use.

Step Five

When the ahipa roots are tender, drain the water and return them to the pot. Then add the minced garlic, unsalted butter, whole milk, salt, and pepper into the pot with the ahipa.

Step Six

Using a potato masher or a fork, mash the ahipa roots along with the other ingredients until you reach the desired consistency. If it’s too dry, add more milk gradually. If it’s too chunky, keep mashing until it’s smoother.

Step Seven

Taste the mashed ahipa and adjust the seasonings if needed. Then transfer to a serving bowl.

Step Eight

Garnish with fresh parsley before serving if desired. Enjoy your homemade Ahipa Mashed with Garlic!
