What You’ll Need

  • 1 pre-made shortcrust pastry
  • 4 large free-range eggs
  • 1 cup of grated Cheddar cheese
  • 2 tablespoons of butter
  • 2 cups of Alexanders (young shoots and leaves)
  • 2 garlic cloves, finely chopped
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of heavy cream
  • 1/4 cup of whole milk

Method

Step One

Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit). Roll out your pre-made shortcrust pastry and line it into a tart tin. Prick the base all over with a fork, then line with baking paper and fill with baking beans or rice. Place in the warmed oven and bake for 12-15 minutes until the edges are firm.

Step Two

While the pastry is baking, prepare the filling. Start by melting the 2 tablespoons of butter in a large frying pan over medium heat. Once the butter is melted and hot, add the finely chopped garlic to it and cook for a minute until the garlic is fragrant.
