What You’ll Need

  • 1 quart of whole milk
  • 4 large eggs
  • 3/4 cup of white sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground mace
  • 1/2 teaspoon pure vanilla extract
  • 1 cup slivered almonds, toasted
  • 2 cups mixed fresh fruit (such as berries, peaches, or kiwis)

Method

Step One

Start off by securing a medium sauce pan. Pour the quart of whole milk into the pan and place it over medium heat. Allow the milk to warm until it’s steamy, but be cautious not to bring it to a boil.

Step Two

In a different bowl, break the 4 large eggs and mix them together with the 3/4 cup of white sugar. Take the 1/4 cup of cornstarch and the 1/4 teaspoon of salt, and integrate them into the egg mixture until it’s well-blended.

Step Three

Once the milk is warm, gradually pour it into the egg mixture. Be sure to whisk continuously in order to prevent the eggs from scrambling.

Step Four

Empty the mixture back into the sauce pan and return it to medium heat. Stir the mixture frequently until it has thickened. This should take roughly 10 minutes.

Step Five

Reduce the heat to low and blend in the 1/4 teaspoon ground mace, 1/2 teaspoon pure vanilla extract, and toasted almonds. Cook, whilst stirring, for an additional two minutes.

Step Six

Let the custard cool for a bit before dividing it amongst your serving dishes. Place these dishes in the refrigerator and let them chill for a minimum of 2 hours to set the custard.

Step Seven

Just prior to serving, garnish the almond custard with your selected fresh fruits. Your almond custard with mace is now ready to enjoy!
