  • 3 large Armenian cucumbers
  • 1 cup crumbled feta cheese
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt

Method

Step One

Start by preparing your ingredients. Rinse and chop the 3 large Armenian cucumbers into small pieces. Thinly slice 1 red onion. Cut 1 cup of cherry tomatoes in half. Finely chop 1/2 a cup of fresh mint.
