Imagine steering away from the traditional pizza and stepping into the healthy land of delectable flavors with my favorite, the Arracacha Flatbread Pizza. Some have even likened it to a Southern Flatbread party, and as a Southern belle myself, raised in Charleston, South Carolina, nothing comes closer to my heart than food spiced up with some good Southern tradition. I can still smell my dad’s biscuits baking in the oven on those Sunday mornings. But, what I love more about this recipe is the intriguing blend of nutrient-packed arracacha with an assortment of fruits that are deliciously driven home with the luxuriousness of mozzarella cheese.

The Southern Charm in This Recipe

As a cook that breathes Southern tradition in all my culinary projects, this Arracacha Flatbread Pizza recipe was love at first sight. The arracacha, a root vegetable, common to the Andean region, graciously lends its flavors to this pizza, just like it does in many South American dishes. Picture it as a heartier cousin to the potato – yet, its subtly sweet flavor is a stronger contender in the culinary world. When combined with the typical pizza ingredients – the yeast, sugar, and salt – it creates a base that you wouldn’t forget in a hurry!

The Health Benefits From Every Slice

Don’t get me started on the health benefits of this pizza. First, there’s the spectacular array of fruits – strawberries, kiwis, bananas, blueberries, and raspberries. Each of these fruits bring their unique nutrient profile to the pizza; from the vitamin C in strawberries to the potassium in bananas and the antioxidants in blueberries. Then, there’s the arracacha itself – it’s packed with vitamins A, C, E, and B-complex as well as iron, calcium and phosphorus.

This heavenly blend isn’t just a pretty sight; it’s also akin to a vitamin factory, helping you meet so many of your daily nutrient requirements. And what’s even better, the all-purpose flour can easily be substituted with gluten-free flour for those who are gluten intolerant.

What You’ll Need

  • 1 cup of peeled and chopped arracacha
  • 2 1/2 cups of all-purpose flour
  • 1 packet of instant yeast (or 2 1/4 teaspoons)
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1 cup of warm water
  • 2 tablespoons of olive oil
  • 1/2 cup of tomato sauce or marinara sauce
  • 2 cups of shredded mozzarella cheese
  • 1/2 cup of sliced strawberries
  • 1/2 cup of sliced kiwi
  • 1/2 cup of sliced banana
  • 1/2 cup of blueberries
  • 1/2 cup of raspberries
  • 1/4 cup of honey
ALLERGENS: Wheat (in all-purpose flour), Yeast, Milk (in mozzarella cheese)

Method

Step One

First, take the chopped arracacha and place it in a saucepan with enough water to cover it. Bring the water to a boil over medium heat and cook until the arracacha is soft.

Step Two

In the meantime, in a large bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Make a well in the center and add the warm water and olive oil. Bring the mixture together using a spoon until a dough forms.

Step Three

Once your arracacha is cooked and soft, drain the water and mash it until it becomes a puree. Mix this puree into your dough, and knead it until it’s smooth and elastic.

Step Four

Cover the dough and let it rise in a warm place for about an hour, or until the dough has approximately doubled in size.

Step Five

When your dough has risen, preheat your oven to 475 degrees Fahrenheit (245 degrees Celsius).

Step Six

Spread the dough out onto a baking sheet to form the base of your pizza. Spread the tomato or marinara sauce over the dough and sprinkle it with the shredded mozzarella cheese.

Step Seven

Bake this in the preheated oven for about 12-15 minutes, or until the cheese has melted and the crust has started to brown.

Step Eight

While the pizza is baking, slice your fruits. Once the pizza is done, take it out of the oven and arrange your sliced strawberries, kiwis, bananas, blueberries and raspberries over the melted cheese.

Step Nine

Lastly, drizzle the honey over the fruit toppings, cut the pizza into slices, and serve.

With the delightful fusion of fruits, cheese, and arracacha, enjoy your homemade Arracacha Flatbread Pizza.
