What You’ll Need

  • 4 large arracachas (similar to sweet potatoes)
  • 1 quart of cooking oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 cup of all-purpose flour

  • 2 tablespoons of honey
  • 4 tablespoons of powdered sugar
  • 1/2 cup of ketchup (optional)

Method

Step One

Wash and peel the arracachas. Then cut them into 1/2 inch thick fries shape.

Step Two

In a large saucepan, heat the quart of cooking oil over medium-high heat until it reaches 375 degrees Fahrenheit.

Step Three

While the oil is heating, season the cut arracachas with salt and black pepper. Ensure the arracachas are well-coated.

Step Four

In a shallow dish, mix together the all-purpose flour and water to create a batter for the fries.

Step Five

Dip the seasoned arracachas in the batter, making sure each one is well-coated.

Step Six
