There’s just something refreshing and invigorating about my recipe for Arrowhead Elephant Ears Salad. This gastronomic delight merges the earthy, tangy taste of fresh arrowhead and the sweet flavor of elephant ears pears with the zing of fresh lemon juice. The result is a plate full of vibrancy that satiates your taste buds, packs a nutritional wallop, and visually stuns all at once.
The Blending of Two Worlds
My dual heritage, Pacific Northwest and Japanese, subtly influences the creation of this recipe. The fresh arrowhead, ubiquitous in Asia, and the elephant ears pears, a local delight of the Pacific Northwest, tell a story of my two worlds coming together. This salad is not only about flavors, but also about my personal journey and shared love for food from different parts of the world.
A Citrusy Twist on A Classic
This recipe gives a nod to a classic berry and yogurt salad, but with a twist. The addition of elephant ears pears and arrowhead gives it a crunchier texture while the lemon juice helps balance the sweetness of the berries and honey. Trust me, this Arrowhead Elephant Ears Salad adds a whole new dimension to your regular salad experience.
The salad pairs beautifully with seafood dishes, especially sushi rolls, complementing the delicate flavors of the fish with its bold, fruity essence. If you’re a fan of pairing your meals, this salad is a match worth exploring. Need ideas for sushi rolls? Here are a few delicious options.
Health Benefits
Besides being sumptuous, this salad is incredibly healthy. Arrowhead is known to be an excellent source of dietary fiber and antioxidants while elephant ears pears are rich in vitamins and minerals. The combination of mixed berries, all bursting with essential nutrients, and Greek yogurt, a good source of probiotics and protein, makes this salad a powerhouse of nutrition.
With this blend of taste, nutrition, and a kiss of my dual heritage, the Arrowhead Elephant Ears Salad remains truly close to my heart and that’s why I love this recipe. I’m certain that, once you try it, it’ll find a special place in yours too!
What You’ll Need
- 2 cups of fresh arrowhead
- 4 elephant ears pears
- 1/4 cup of fresh lemon juice
- 2 cups of mixed berries (raspberries, blueberries, strawberries)
- 1/4 cup of honey
- 1 cup of plain Greek yogurt
- 1/4 cup of chopped fresh mint leaves
- 6 individual salad servings
Method
Step One
Start by thoroughly washing the 2 cups of fresh arrowheads and the 4 elephant ears pears. Slice the pears into thin strips or any desired shape.
Step Two
Proceed to prepare the fruit. Wash the mixed berries likewise and set them aside. You can choose to half or quarter strawberries if they are large.
Step Three
In a large salad bowl, combine the arrowhead, sliced elephant ears pears, and mixed berries.
Step Four
In a separate bowl, whisk together the 1/4 cup of fresh lemon juice and 1/4 cup of honey until the honey is completely dissolved.
Step Five
In another bowl, you’ll mix 1 cup of plain Greek yogurt until it’s smooth and creamy.
Step Six
Combine the lemon-honey mixture into the bowl with Greek yogurt. Stir the dressing until it’s evenly mixed.
Step Seven
Pour the creamy dressing over the fruit in the salad bowl. Toss the salad gently to evenly distribute the dressing.
Step Eight
Just before serving, garnish the salad with the 1/4 cup of chopped fresh mint leaves. Now, your Arrowhead Elephant Ears Salad is ready to serve. This recipe makes enough for 6 individual salad servings.
