What You’ll Need

  • 2 cups canned artichoke hearts, drained and chopped
  • 1 cup green olives, pitted and chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons capers, drained
  • 1/2 teaspoon freshly ground black pepper
  • Crackers or bread for serving

Method

Step One

Start by preparing your ingredients. Drain the artichoke hearts and chop them finely. Do the same with the green olives. Mince the 2 cloves of garlic, and extract juice from one lemon. Rinse and chop the fresh parsley. Set aside all the prepared ingredients.

Step Two

In a food processor, combine the chopped artichoke hearts, chopped green olives, minced garlic, and lemon juice. Also add in the drained capers. Pulse the ingredients until they are coarsely chopped and combined, but not completely pureed. You want to retain some texture in the tapenade.

Step Three

While the food processor is running, slowly drizzle in the 1/4 cup of extra-virgin olive oil. This will help to bind the ingredients and create a more spreadable consistency.

Step Four

Transfer the mixture from the food processor into a bowl. Stir in the chopped fresh parsley and freshly ground black pepper. Adjust the seasoning to taste, if necessary.

Step Five

Cover the bowl and allow the tapenade to chill in the fridge for at least 30 minutes before serving. This allows the flavors to meld together and develop.

Step Six
