What You’ll Need

  • 2 ripe avocados, diced
  • 2 cans of black beans, drained and rinsed (15 oz. each)
  • 1 large red bell pepper, finely diced
  • 1 large yellow bell pepper, finely diced
  • 1 small red onion, finely chopped
  • 1 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 cup frozen corn, thawed
  • Salt to taste
  • Black pepper to taste
  • Lime Dressing Ingredients:
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 2 tbsp. honey
  • 1 clove garlic, minced
  • 1 tsp. cumin
  • Salt to taste
  • Black pepper to taste

Method

Step One

Prepare all your ingredients for the salad. Dice your ripe avocados and your red and yellow bell peppers. Drain and rinse your black beans. Finely chop your red onion, fresh cilantro, and fresh parsley.

Step Two

Take your thawed corn and add it to a large salad bowl. Add in your diced avocados, peppers, rinsed black beans, chopped onion, cilantro and parsley. Season with salt and black pepper to taste and mix well.

Step Three

For the Lime Dressing, juice your limes into a small bowl. Add in your olive oil, honey, minced garlic and cumin. Season with salt and black pepper to taste and whisk until well combined.

Step Four

Pour your Lime Dressing over your salad, ensuring everything is well covered. Toss your salad to mix the dressing through. Allow to sit for a few minutes to let the flavours meld together before serving.
