What You’ll Need

  • 4 ripe avocados, pitted and peeled
  • 1 cup fresh basil leaves
  • 4 cloves garlic
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 1/4 cup freshly grated Parmesan cheese
  • 1 pound spaghetti
  • 1 cup cherry tomatoes, halved
  • 1/2 cup canned corn kernels, drained and rinsed

Method

Step One

Begin by preparing the avocados, pit them and remove their skin. Next, peel and mince the garlic cloves. Then cut the cherry tomatoes in half and rinse the canned corn kernels.

Step Two

Add the peeled avocados, fresh basil leaves, minced garlic, freshly squeezed lemon juice, and half of the olive oil into a blender or food processor. Season with salt and freshly ground black pepper according to your preference.

Step Three

Blend the content until everything is smoothly incorporated. This is your avocado-based pasta sauce. Set it aside for the moment.

Step Four

Bring a large pot of salted water to boil. Add in the spaghetti and cook it according to the instructions on its package.

Step Five
