What You’ll Need

  • 8 slices smoked bacon
  • 2 cups cheddar cheese, grated
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 tablespoon vegetable oil
  • 4 large eggs
  • 1 cup whole milk
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon ground nutmeg

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Use the vegetable oil to grease a 9-inch pie dish lightly.

Step Two

In a mixing bowl, combine the all-purpose flour and cold butter. Use your fingertips to rub the butter into the flour until it has the consistency of fine breadcrumbs. Then, in a smaller bowl, beat the egg yolk with the cold water. Stir this into the flour and butter mixture to form a dough.

Step Three

Once the dough has come together, turn it out onto a lightly floured surface. Roll it out to fit into your pie dish, and then press it gently into the dish, trimming any excess. Prick the bottom with a fork, line it with parchment paper, and then fill with baking beans. Bake in your preheated oven for about 15 minutes.

Step Four

While the pie base is baking, cook the smoked bacon slices until they are crispy. Once they are done, place them on a paper towel to absorb excess oil, and then chop them into small pieces.

Step Five

In a separate bowl, whisk together the four large eggs, the whole milk, salt, pepper, and ground nutmeg. Stir in the cooked bacon and grated cheddar cheese.

Step Six

After 15 minutes, remove the pie base from the oven. Carefully remove the baking beans and parchment paper. Pour in the egg, bacon, and cheese mixture.

Step Seven

Place the pie back into the oven and bake for approximately 25-30 minutes, or until the filling is set and golden on top.

Step Eight

Once done, remove the pie from the oven and let it cool slightly before serving. Then, enjoy your delicious Bacon and Cheese Pie.
