However, every now and then I like to veer away from my usual fare to try something different. Today, I’ll be sharing my take on a classic British recipe: Bacon-Wrapped Pork Tenderloin. This Bacon-Wrapped Pork Tenderloin recipe was inspired by the traditional British cuisine and can be credited to the immensely talented Gordon Ramsay whose recipes never fail to impress me. The succulent pork tenderloin is enveloped by the smoky flavors of the bacon making this dish equally at home at a formal dinner party or a quiet family dinner.

What You’ll Need

  • 2 pounds of pork tenderloin
  • 12 slices of bacon
  • 2 teaspoons of salt
  • 2 teaspoons of pepper
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of fresh rosemary, finely chopped
  • 1 tablespoon of fresh thyme, finely chopped
  • 1 cup of dry white wine
  • 1 tablespoon of dijon mustard
  • 3 tablespoons of unsalted butter
  • 1 cup of heavy cream
ALLERGENS: Pork, bacon

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Step Two

Season the pork tenderloin all over with the salt and pepper. Wrap the tenderloin with the slices of bacon, securing with toothpicks if necessary.

Step Three

Heat the olive oil in a large ovenproof skillet over medium-high heat. Once the oil is hot, add the bacon-wrapped tenderloin and sear on all sides until the bacon is crispy, about 5 minutes per side.

Step Four

Once the tenderloin is seared, scatter the minced garlic, chopped rosemary, and chopped thyme over the top. Place the skillet in the preheated oven and roast for 25-30 minutes, or until the pork is cooked through and the internal temperature reaches 145 degrees Fahrenheit (63 degrees Celsius).

Step Five

While the pork is roasting, mix together the white wine and dijon mustard in a small bowl. Set aside.

Step Six

When the pork is done, remove it from the oven and transfer it to a cutting board to rest. Put the skillet back on the stove over medium heat. Add the wine and mustard mixture to the skillet, scraping up any browned bits from the bottom of the pan. Add the butter and whisk until it’s melted and the sauce is smooth.

Step Seven

Reduce the heat to low and whisk in the heavy cream until the sauce is fully combined. Season with additional salt and pepper if needed.

Step Eight
