What You’ll Need
- 4 cups fresh badderlocks (seaweed), rinsed and chopped
- 4 cloves of garlic, minced
- 2 large onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 bell pepper, chopped
- 2 cups of fresh spinach
- 2 large carrots, shredded
- 1 red chili pepper, finely chopped (optional)
- 4 tablespoons of olive oil
- 1 cup vegetable broth
- 1/4 cup fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
Method
Step One
Heat the olive oil in a large pan over medium-high heat. Add the finely chopped onions and minced garlic, stirring constantly until they become soft and fragrant. This usually takes about 5 minutes.
Step Two
Add the chopped tomatoes, bell pepper, and red chili pepper (if you’re using it) to the pan. Continue to cook and stir for another 5 minutes, or until the vegetables are tender.
