What You’ll Need

  • 4 cups fresh badderlocks (seaweed), rinsed and chopped
  • 4 cloves of garlic, minced
  • 2 large onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 bell pepper, chopped
  • 2 cups of fresh spinach
  • 2 large carrots, shredded
  • 1 red chili pepper, finely chopped (optional)
  • 4 tablespoons of olive oil
  • 1 cup vegetable broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Method

Step One

Heat the olive oil in a large pan over medium-high heat. Add the finely chopped onions and minced garlic, stirring constantly until they become soft and fragrant. This usually takes about 5 minutes.

Step Two

Add the chopped tomatoes, bell pepper, and red chili pepper (if you’re using it) to the pan. Continue to cook and stir for another 5 minutes, or until the vegetables are tender.

Step Three

Next, add the rinsed and chopped badderlocks (seaweed), shredded carrots, and fresh spinach to the pan. Stir the mixture well to combine. Let it cook for about 5 to 7 minutes, or until all the vegetables are cooked to your liking.

Step Four

Pour in the vegetable broth and bring the mixture to a low simmer. Let it cook for another 10 minutes, allowing the flavors to blend together well.

Step Five
