What You’ll Need

  • 1 lb Arrowhead root (also known as duck potato)
  • 3 cups of water
  • 1 tablespoon salt
  • 2 teaspoons sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 4 tablespoons unsalted butter
  • 1 cup finely shredded sharp cheddar cheese
  • 2 medium apples, peeled, cored, and thinly sliced
  • ½ cup granulated sugar
  • 1 tablespoon cinnamon
  • ¼ cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
ALLERGENS: Wheat, Milk, Cheese

Method

Step One

Begin by preheating the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper, set aside.

Step Two

Peel the Arrowhead root and cut into thin slices. Place them in a pot with the 3 cups of water, 1 tablespoon of salt, and 2 teaspoons of sugar. Bring to a boil and cook for 5 minutes, or until the root is tender. Drain and set aside.

Step Three

In a large bowl, combine the all-purpose flour, baking powder and a pinch of salt. Cut in the unsalted butter using a pastry cutter or two forks making sure mixture resembles coarse crumbs. Add thinly sliced Arrowhead root, shredded sharp cheddar cheese and mix well till a dough forms.

Step Four

Roll out the dough on a floured surface into a large rectangle of about 1/4 inch thickness. Layer the sliced apples on the dough, sprinkle with 1/2 cup of granulated sugar and 1 tablespoon of cinnamon. Roll up the dough along the long side, like a jelly roll.

Step Five

Cut the rolled dough into 1-inch thick slices and place flat side down on the prepared sheet. Bake for 25-30mins or until golden brown.

Step Six

While the elephant ears are baking, prepare cream cheese glaze by mixing together softened cream cheese, powdered sugar, and lemon juice until smooth.

Step Seven

Once the elephant ears are done baking, let them cool slightly before drizzling the glaze over the top. Serve warm and enjoy!
