What You’ll Need

  • 6 John Dory fillets
  • Salt and freshly ground black pepper for seasoning
  • 2 tablespoons olive oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 cup white wine
  • 1 and 1/2 pounds ripe tomatoes, finely chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon white sugar
  • 1/2 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar

Method

Step One

Start by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius). Season the John Dory fillets with salt and freshly ground black pepper.

Step Two

Heat the olive oil in a large oven-safe skillet over medium heat. Add the finely sliced onion and cook until it becomes translucent. Add the minced garlic and continue to cook for a couple of minutes.

Step Three

Pour in the white wine and let it simmer until it reduces by half. This should take about 5 minutes.

Step Four

Next, add the finely chopped ripe tomatoes to the skillet, along with the tomato paste and white sugar. Stir everything together and let it simmer for about 10 minutes until it starts to thicken.

Step Five

Now, place the seasoned John Dory fillets on top of the tomato mixture in the skillet. Transfer the skillet to the preheated oven and bake for about 15 minutes or until the fish is cooked through and flakes easily with a fork.

While the fish is baking, chop the fresh basil leaves. Once the fish is done baking, remove the skillet from the oven. Sprinkle the chopped basil leaves over the baked John Dory and drizzle balsamic vinegar top.
