What You’ll Need

  • 2 whole sea bass, about 1.5 pounds each
  • 2 lemons, sliced
  • 6 cloves garlic, minced
  • 1 large red onion, sliced
  • 2 red or green bell peppers, sliced
  • 1/2 cup of olive oil
  • 1 cup of white wine
  • 1 bunch fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Method

Step One

Preheat your oven to 400°F (200°C). Rinse the sea bass and pat them dry. Make diagonal slashes in the sides of the fish using a sharp knife, this will help the flavours to infuse better.

Step Two

Place the fish in a baking dish that has been greased with some olive oil. Push slices of lemon, a sprinkle of salt and freshly ground black pepper, and some minced garlic into the slashes on the fish.

Step Three

Over the fish, scatter the sliced red onion, bell peppers, and remaining garlic. Drizzle 1/2 cup of olive oil over everything.

Step Four

In a small saucepan, gently heat the white wine until it’s warm, then pour over the fish and vegetables in the dish. Season with additional salt, pepper, and paprika.

Step Five

Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes, or until the fish is flaky and cooked through.

Step Six

Remove from the oven and sprinkle the chopped fresh parsley on top of the fish. Serve the baked sea bass with the roasted peppers and onions. Enjoy your meal!
