As a child, the earthy smell of fresh vegetables from the garden was among my favorite things. I remember the endless fields of Montana, where between assisting my father with the cattle and cooking with my mother, my love for food was born. This sentiment has led me to cherish every recipe I create, one of them being the glorious Baked Skirret Fries.
A Taste of the Earth
If you’ve never tried skirret before, you’re in for a treat. Its sweet, nutty flavor is reminiscent of parsnips, but with a unique twist that’s all its own. Its robust taste is amplified in our Baked Skirret Fries recipe, and will leave you reaching for second and third servings before you know it. Dressed with olive oil and dusted with flavorful seasonings, every bite is a testament to the vitality of the earth. Paired with a juicy bison burger or a rich venison steak, these fries could easily become a staple at your table, just as they have at mine.
A Healthier Alternative
This vegetable-based delicacy is not only a dance for the taste buds, but also a promising ally for your health. Skirret is packed with vitamins A and C, both of which support a healthy immune system. It’s also high in fiber and low in calories, making it a wonderful choice for weight management. So, we aren’t just relishing a fantastic flavor, we’re also appreciating an ingredient that does the body good.
And let’s not forget the benefit of oven-baking instead of deep-frying. Opting for the oven slashes the fat content, and ups the nutritional value. So compared to traditional potato fries, you’re getting a much healthier but equally delicious alternative.
Flavorful Seasonings
The Baked Skirret Fries fare well with a menagerie of flavors – black pepper gives them a hint of heat, garlic powder adds depth, and lemon juice provides a refreshing zip. The nuttiness of Parmesan sprinkled over the hot fries perfectly complements the earthy skirret, while the fresh parsley gives them a pop of color and a twist of freshness.
Being a Montana rancher’s son with a cooking mom, I’ve always believed that simplicity is the soul of great cuisine. This philosophy shines through in this recipe, balancing robust, earthy flavors with hints of sharp, zesty undertones.
These fries are perfect for both weekday dinners and special occasions. Try it out with your favorite protein and watch your family’s faces light up with delight. So, the next time you’re in the mood for a healthy, delicious treat, remember – there’s a lot to love about Baked Skirret Fries.
What You’ll Need
- 2 pounds of skirret
- 1 tablespoon of olive oil
- Salt to taste
- 1/4 teaspoon of ground black pepper
- 1 teaspoon of garlic powder
- 1 tablespoon of fresh lemon juice
- 2 tablespoons of chopped fresh parsley
- 1/4 cup of grated Parmesan cheese
Method
Step One
Preheat the oven to 400 degrees F (200 degrees C).
Step Two
Wash the skirret thoroughly and pat dry. Cut them into fry-like segments.
Step Three
Place the skirret pieces in a large bowl. Drizzle them with olive oil and toss to coat evenly.
Step Four
Add salt, ground black pepper, and garlic powder to the bowl and toss until the skirret pieces are fully coated with the seasonings.

Arrange the seasoned skirret pieces in a single layer on a baking sheet. Bake them in the preheated oven for about 20-25 minutes, or until they are golden brown and crisp. Make sure to turn them halfway through the baking time for even cooking.
Step Six
Once the skirret fries are done baking, remove them from the oven and while still hot, drizzle fresh lemon juice over them. Toss to combine.
Step Seven
Sprinkle the fries with chopped fresh parsley and grated Parmesan cheese, then serve immediately.
