What You’ll Need
- 6 medium sweet potatoes
- 1 stick unsalted butter (1/2 cup)
- 2 teaspoons of ground Ceylon cinnamon
- 2 tablespoons of brown sugar
- 1/4 teaspoon of salt
- Optional: Marshmallows for topping
Method
Step One
Preheat the oven to 400 degrees F (200 degrees C). While the oven is preheating, wash and pat dry the sweet potatoes.
Step Two
Prick the sweet potatoes all over with a fork. This allows steam to escape and makes the skins easy to peel away later.
Step Three
Place the sweet potatoes on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until a fork easily goes into the potato.
Step Four
While the sweet potatoes are baking, you can prepare the cinnamon butter. In a small saucepan over medium heat, melt the butter. Once the butter is melted, stir in the ground Ceylon cinnamon, brown sugar and salt. Continue stirring until the sugar is completely dissolved. Remove the saucepan from heat and set aside.
Step Five
Once the sweet potatoes are done, allow them to cool slightly so you can handle them. Cut a slit lengthwise across each potato and fluff up the insides with a fork.
