What You’ll Need

  • 2 cups fresh bamboo shoots, thinly sliced
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced

  • 1 cup carrots, julienned
  • 1 cup mushroom, sliced
  • 1/2 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 3 tablespoons oyster sauce
  • 1 cup cherry tomatoes, halved
  • 1 cup pineapple chunks
  • Salt and pepper, to taste
  • 2 tablespoons sesame seeds, for garnish
  • Sliced green onions, for garnish

Method

Step One

Start by preparing your vegetables. Slice the bamboo shoots, bell peppers, onions, and mushrooms. Julienne the carrots, halve the cherry tomatoes and mince the garlic and fresh ginger.

Step Two

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add in the minced garlic and ginger. Sauté them until they’re fragrant, which should take about a minute.

Step Three

Add the sliced onions to the skillet or wok, stirring frequently. Cook until they become translucent. This should take about 5 minutes.

Step Four

Introduce the bamboo shoots, bell peppers, carrots, and mushrooms to the skillet or wok. Stir-fry these ingredients for about 5 to 6 minutes, or until they’re tender to your liking.

Step Five

In a separate bowl, whisk together the soy sauce, oyster sauce, cornstarch, and sugar until it forms a smooth sauce.

Step Six

Pour the sauce over the cooking vegetables. Stir until all the ingredients are evenly coated.

Step Seven

Add in the cherry tomatoes and pineapple chunks. Continue to stir-fry all ingredients until the tomatoes and pineapples are heated through.

Step Eight

Season the stir-fry with salt and pepper to taste. Feel free to adjust the seasoning according to your preference.
