What You’ll Need

  • 1 1/2 cups mashed bananas (about 4 ripe bananas)
  • 2 teaspoons lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1 1/2 cups buttermilk
  • Frosting of your choice (optional)
  • Sliced bananas for topping (optional)
ALLERGENS: Wheat (in all-purpose flour), Milk (in buttermilk, unsalted butter), Eggs

Method

Step One

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish or line it with parchment paper.

Step Two

In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt, set aside.

Step Three

In a large bowl, cream butter, oil, granulated sugar and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Step Four

Gradually add the flour mixture to the creamed butter mixture, alternately with the buttermilk until just mixed. Fold in banana mixture.

Step Five

Pour batter into prepared pan and smooth the top. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan on a wire rack.

Step Six
