What You’ll Need
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 3 large bananas, mashed
- 3/4 cup of white sugar
- 1 egg, lightly beaten
- 1/3 cup of butter, melted
- 1 teaspoon of vanilla extract
Method
Step One
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
Step Two
In a large bowl, mix together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda and 1/2 teaspoon of salt. Leave the dry mixture aside for later use.
Step Three
In another bowl, beat together 3 bananas, mashed, 3/4 cup of white sugar, 1 egg, lightly beaten, 1/3 cup of melted butter and 1 teaspoon of vanilla extract.
Step Four
Incorporate the banana mixture into the bowl containing the flour mixture. Stir just to moisten.(The batter will be chunky, do not over mix).
Step Five
Spoon batter into prepared muffin cups.
Step Six
Bake in a preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
Step Seven
Let the muffins cool down in the muffin tray for 10 minutes, and then move to wire rack to cool completely.
