What You’ll Need
- 2 Banana pith
- 1 tablespoon Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Split urad dal
- 1 Red chili, broken into pieces
- 1 pinch Asafoetida (hing)
- 1 teaspoon Turmeric powder
- 2 Green chilies, finely chopped
- 1 Medium-sized Onion, finely chopped
- Salt to taste
- 1 teaspoon Sugar
- 2 tablespoons Grated coconut
- 6 Curry leaves
- 1 cup Water
- Cilantro/coriander leaves for garnishing
Method
Step One
Firstly, peel the outer layer of the banana pith and chop it into small pieces. Soak these pieces in water mixed with a teaspoon of turmeric powder to prevent it from turning black.
Step Two
Heat 1 tablespoon of oil in a pan. Once the oil is hot, add 1 teaspoon of mustard seeds and let them pop. Then add split urad dal, 1 red chili, a pinch of asafoetida, and 6 curry leaves. Sauté them until the dal turns golden brown.
Step Three
Add the finely chopped onion and green chilies to the pan. Sauté until the onion turns translucent. Now drain the water from banana pith and add that to the pan.

Add salt to taste and 1 teaspoon of sugar to the mixture. Cover the pan and let it cook on medium heat. Stir it occasionally to prevent it from burning at the bottom of the pan.
Step Five
Once the banana pith becomes soft, add a cup of water to the pan. Let it cook until all the water evaporates. Ensure that the pith is fully cooked before moving onto the next step.
Step Six
Add 2 tablespoons of grated coconut to the pan and mix well. Cook for another two minutes. Finally, garnish your dish with fresh cilantro or coriander leaves.
