One of the recipes that has always charmed me is the enchanting Barberry Chutney. Inspired by the love for berries and seasonings that my Irish grandparents passed down to me, this delightful dish adds a refreshing twist to any meal with its perfect blend of sweet, sour and spicy notes. Coupled with its simple yet unique flavor profile, it’s a timeless family winner! Just like our favorite Beetroot and Apple Chutney, this gentle red hued relish holds a special place on our dinner table!

The Special Ingredients

What makes this Barberry Chutney extra special are its simple, favoursome ingredients. Think fresh barberries that pop with tartness, sweet finely chopped apples, a splash of white vinegar for that much needed tang and, of course, a blend of aromatic spices – ginger, cinnamon, chili flakes for a delightful kick! Every spoonful is a lively dance of flavors that keeps you coming back for more. If you’re a fan of Indian cuisines like I am, this gem will sit nicely with a plate of pilaf, or a batch of curried vegetables. Alternatively, for my New England seafood enthusiasts out there, the exciting flavours of this chutney act as a fantastic accompaniment to grilled, baked, or steamed fish. It’s quite similar to a zesty Cranberry Chutney in its pairing abilities.

What You’ll Need

  • 2 cups of fresh barberries
  • 2 apples, cored and finely chopped
  • 1 cup of sugar
  • 1/2 cup of white Vinegar
  • 1/2 cup of water
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of chili flakes
  • 1/4 teaspoon of salt
ALLERGENS: Apples, Onion, Garlic

Method

Step One

Begin by washing the fresh barberries and the apples thoroughly. After that, core the apples and finely chop them. Also, finely chop one small onion and mince two cloves of garlic. Set everything aside for future use.

Step Two

Take a saucepan and put it over medium heat. Add to the saucepan the barberries, chopped apples, finely chopped onion, minced garlic, 1 cup of sugar, 1/2 cup of white vinegar and 1/2 cup of water. Mix all the ingredients together until they are fully combined.

Step Three

Bring the mixture to a boil, stirring occasionally. Once it starts boiling, reduce the heat to low. Allow the mixture to simmer for about 1 hour. The chutney should reduce and thicken.

Step Four

After an hour, add in the ground ginger, ground cinnamon, chili flakes and salt to the chutney. Stir the seasoning into the chutney for a couple of minutes until completely mixed in.

Step Five

Cook the chutney for another 30 minutes on low heat or until it reduces to your preferred consistency. Remember to stir it occasionally to avoid the chutney sticking to the bottom of the saucepan.

Step Six

Once your Barberry Chutney is at the desired consistency, remove it from the heat and allow it to cool. It can be served immediately, or stored in a sanitized jar in the refrigerator for up to a month to further develop the flavors.
