What You’ll Need

  • 2 cups high-quality extra virgin olive oil
  • 4 sprigs of fresh basil
  • 1/4 cup freshly-squeezed lemon juice

Method

Step One

First, gently wash the basil sprigs under cold water. Pat them dry using a clean towel to ensure no water remains, as it can cause the olive oil to go cloudy.

Step Two

In a medium saucepan, combine your high-quality extra virgin olive oil and the fresh, clean sprigs of basil. Turn your stove to the lowest heat possible and let the oil warm slowly. The goal is to infuse the oil with the basil flavor, not cook the basil. Stir occasionally and do not let the oil simmer or boil.

Step Three

After about 10 minutes of gentle heating, turn off the stove and allow the oil to cool to room temperature with the basil still in it. This continuing infusion will deepen the flavor.

Step Four

When the oil has cooled, strain the mixture to remove the basil sprigs. Press on the basil to extract all the flavored oil. It’s essential not to let any basil remain as it can cause the oil to spoil more quickly.
