Why I Love Australian BBQ Lime and Chili Prawns

I have an everlasting fondness for recipes that embody the spirit of a place or a culture. This love bonds me with my Louisianian roots and French heritage. But it’s not confined to my personal world. It’s a universal love that ties me to gastronomies from across the globe. Today, I’m elated to share an Australian recipe with you – BBQ Lime and Chili Prawns.

BBQ Lime and Chili Prawns

A Gourmet Journey Down Under

The Australians have been grilling on their verandas for generations. Their style of BBQ is a celebration of simplicity and native ingredients. My BBQ Lime and Chili Prawns recipe brings this Australian culinary tradition right to your backyard… all you need are the prawns, limes, chili flakes, garlic, and a handful of other simple ingredients.

The Magic of Fresh Ingredients

I have always been a believer in the transformative power of fresh ingredients. Even with my creole and French dessert background, the quality of the ingredients makes a world of difference. This philosophy becomes remarkably evident when making the BBQ Lime and Chili Prawns recipe. Pick the freshest prawns you can find and the juiciest limes for utmost flavor and quality.

You may be surprised by the depth of flavor achieved by the easy-going combination of lime, chili, and the grilling process. But that’s just how it works: fresh ingredients simply prepared can yield the most exciting taste sensations.

Inspiration from Chefs

Time and again, I draw inspiration from remarkable chefs across the world. An excellent example is Ben O’Donoghue, an Australian chef known for his love of BBQ. His mantra of using local produce and cooking it simply has been a north star for this BBQ Lime and Chili Prawns dish.

While this dish may not play with the Creole spices or the elegant sweetness that are trademarks of my home-town classics like beignets or éclairs, it still captures an essence of authenticity, of love for food, of celebration of ingredients that makes it uniquely delightful. BBQ Lime and Chili Prawns, folks, it’s one culinary journey you’d want to make!

What You’ll Need

  • 2 pounds of raw prawns, peeled and deveined
  • 6 fresh limes, juiced
  • 2 tablespoons of chili flakes
  • 6 cloves of garlic, crushed
  • 4 tablespoons of olive oil
  • Salt and black pepper to taste
  • Wooden or metal skewers for grilling
  • Fresh parsley to garnish
ALLERGENS: Prawns, garlic

Method

Step One

Begin by soaking your wooden skewers in water for about 30 minutes. If you are using metal skewers, you can skip this step. This technique just prevents them from burning when you put them on the grill.

Step Two

In a large glass or ceramic bowl combine the fresh lime juice, chili flakes, crushed garlic, and olive oil. Stir these ingredients thoroughly to create a marinade for your prawns.

Step Three

Add the peeled and deveined prawns to the bowl of marinade. Use a spoon or your hands to make sure each prawn is coated well. Cover the bowl and allow the prawns to marinate at room temperature for about 15 minutes. Remember not to marinate them for too long as the lime juice can start to cook the prawns.

Step Four

After marinating, thread the prawns onto your pre-soaked skewers, and season with salt and black pepper to your preference.

Step Five

Preheat your BBQ to a medium-high heat. Once it’s ready, place the skewers onto the grill. Cook the prawns for about 2-3 minutes on each side, or until they turn pink and are cooked through.

Step Six

Once cooked, remove from the grill and transfer to a serving plate. Finish the dish by garnishing with fresh parsley. Your BBQ Lime and Chili Prawns are now ready to be enjoyed!
