What You’ll Need

  • 1 lb beef tenderloin, cut into thin strips
  • 3 Big Jim peppers, seeds removed and cut into thin strips
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup beef broth
  • 2 medium carrots, sliced thinly
  • 1 red bell pepper, seeds removed and cut into thin strips
  • 2 tablespoons cooking oil
  • Salt and pepper to taste
  • 1 cup steamed jasmine rice for serving

Method

Step One

First, season the beef strips with salt and pepper. Set aside. In a bowl, combine soy sauce, oyster sauce, cornstarch and beef broth. Mix until well blended and set aside.

Step Two

Next, heat the cooking oil in a wok or large frying pan over medium-high heat. Add the beef to the hot oil. Stir-fry until all sides are browned, usually it takes about 2 to 3 minutes. Once done, remove the beef from the wok and set aside.

Step Three

In the same wok, add the sliced onion, minced garlic, and the sliced Big Jim peppers. Stir-fry for about 2 minutes, until the vegetables start to soften.

Step Four

Then add the sliced carrots and red bell pepper to the mix. Stir-fry for an additional 3 to 4 minutes until all the veggies are crisp-tender.

Step Five

Next, return the cooked beef to the wok. Pour the soy-oyster-cornstarch mixture that was set aside into the wok. Stir well until all the ingredients are well coated and the sauce starts to thicken.

Step Six

Finally, check the seasoning. Add more salt or pepper if needed.

Step Seven
