Why I Love Austrian Beef Goulash

As a man with Irish roots, hearty comfort food is my specialty and today’s dish is no different. The Beef Goulash, an Austrian delight, finds its way onto our table, captivating us with its rich and warm flavors. Interestingly, the recipe not only connects us to the Austrians but also ties in beautifully with my New England roots, reminding me of our slow-cooked Irish beef stew.

My appreciation for comfort food stems from treasured experiences with my grandparents, who were always big believers in having a good, substantial meal at the end of the day. While the Beef Goulash may not be an O’Sullivan family recipe originally, it certainly embodies the warmth and love that comes from those meals we shared. Renowned Irish Chef Neven Maguire shaped this affection further with his insistence on using local ingredients to make soul-satisfying meals.

The robustness of the Beef Goulash makes it a highly versatile dish. For me, a side of roasted parsnip and carrots takes the meal to a whole new level. If you are looking for a different carbohydrate option, my fiancé, Laura, loves to pair it with a creamy serving of mashed potatoes. The Goulash also works remarkably well with some freshly baked rye bread, as the spiciness of the caraway seeds in the stew mirrors its tangy flavor in the bread. For wine aficionados, a glass of Cabernet Sauvignon comes highly recommended with the meal, as its full body can stand up to the hearty goulash.

What You’ll Need

  • 2 pounds of beef chuck roast, cut into 1 inch cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons Hungarian sweet paprika
  • 1 teaspoon caraway seeds
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 cup dry red wine
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 tomato, peeled and chopped
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)
ALLERGENS: beef, vegetable oil, garlic, wheat, sulfites

Method

Step One

Start your preparation by washing, peeling, and chopping all produce as necessary: the onions, garlic, bell peppers, and tomato. Then, chop your beef roast into 1-inch cubes. Make sure all your other ingredients are at hand.

Step Two

Heat the vegetable oil in a dutch oven or large soup pot over medium heat. Once the oil is hot, add the beef cubes and brown them on all sides. Remove the browned beef cubes from the pot and set them aside for now.

Step Three

In the same pot, add the finely chopped onions and minced garlic. Cook them until they are soft and translucent. Pay close attention to not let them burn.

Step Four

Add the Hungarian paprika, caraway seeds, and flour to the pot. Stir these ingredients into the onions and garlic, making sure they are well combined and evenly distributed.

Step Five

Next, slowly pour the beef broth and red wine into the pot while continuously stirring to combine everything. Then add the browned beef cubes back to the pot.

Step Six

Add the chopped red and yellow bell peppers, tomato, apple cider vinegar, sugar, and salt and black pepper to taste into the pot. Gently stir all the ingredients until they are well combined.

Step Seven

Cover the pot and let the goulash simmer for about 2 hours, or until the beef is tender and the flavors are well combined. Stir occasionally to prevent any ingredient from sticking to the bottom of the pot.

Step Eight

Once your Beef Goulash is done cooking, turn off the heat and let it rest for a few minutes before serving. Garnish each plate with freshly chopped parsley, if desired. Enjoy your hearty and flavorful Beef Goulash!
