What You’ll Need

  • 2 lbs of sirloin beef, cut into 1 inch cubes
  • 3 bell peppers, assorted colors, cut into 1 inch pieces
  • 2 medium red onions, cut into 1 inch pieces
  • 1/2 cup of olive oil
  • 1/4 cup of red wine vinegar
  • 2 cloves of garlic, minced
  • 1 tablespoon of smoked paprika
  • 1/2 tablespoon of ground cumin
  • 1/2 tablespoon of dried oregano
  • Salt and black pepper to taste
  • 12 wooden or metal skewers

Method

Step One

Begin by prepping all your ingredients. Cut the 2 lbs of sirloin beef into 1 inch cubes. Cut the 3 bell peppers and 2 medium red onions into 1 inch pieces as well.

Step Two

Prepare the marinade by combining 1/2 cup of olive oil, 1/4 cup of red wine vinegar, 2 minced cloves of garlic, 1 tablespoon of smoked paprika, 1/2 tablespoon of ground cumin, 1/2 tablespoon of dried oregano, and salt and black pepper to taste. Mix well to ensure all the flavors meld together.

Step Three

Add the beef to the marinade and mix it thoroughly ensuring that each piece is well-coated with the marinade. Cover the beef and set it in the refrigerator for at least 1-2 hours.

Step Four

After the beef has marinated, heat your grill or grill pan to medium-high heat. As it’s heating, begin threading the beef, bell peppers, and red onions onto the skewers. Make sure to alternate between the beef and vegetables to make a colorful and balanced skewer.

Step Five

Grill the skewers for about 10-15 minutes, turning occasionally to cook evenly on all sides. The beef should be cooked to your preferred doneness and the vegetables should be just tender.
