- 3 pounds of Beef Steak
- 2 tablespoons of Olive Oil
- Salt to taste
- Pepper to taste
- 2 pounds of Baby Potatoes
- 4 sprigs of fresh Rosemary
- 3 tablespoons of Butter, melted
- 2 pounds of fresh Green Beans, trimmed
- 2 tablespoons of Garlic, minced
- 1 tablespoon of Lemon Zest
- 2 tablespoons of Lemon Juice
- 1 cup of Beef Broth
- 2 tablespoons of Mustard
Method
Step One
Start by preheating your oven to 400°F (200°C). Meanwhile, rub the beef steaks with 1 tablespoon of olive oil, salt, and pepper. Make sure all of the steaks are evenly coated.
Step Two
Heat up a large oven-safe skillet over medium-high heat. Add the steaks to the pan and sear each side for 3 minutes or until they have a nice brown crust. Remove the steaks from the skillet and set them aside.
Step Three
Add the baby potatoes and 2 sprigs of rosemary into the same skillet and cook for 3-5 minutes or until they start to brown. Drizzle the melted butter over the potatoes. Sprinkle some salt and pepper to taste.
Step Four
Place the skillet in the oven and roast the potatoes for 20 minutes. After 20 minutes, add the green beans and the rest of the rosemary sprigs to the skillet. Drizzle 1 tablespoon of olive oil and continue to roast for another 15 minutes.
