What You’ll Need
- 2 pounds of beef sirloin
- 12 tortillas
- 2 ripe avocados
- 1 bunch of fresh papalo
- 1 large onion
- 4 limes
- 3 tomatoes
- 2 jalapeno peppers
- 2 cloves of garlic
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- 1/2 a teaspoon of black pepper
- Salt, to taste
- 2 tablespoons of vegetable oil
- Fresh cilantro, for garnish
Method
Step One
Start by cutting the beef sirloin into small chunks. Set a large skillet over medium heat and add the vegetable oil. Once the oil is hot, add the beef and cook it until it is browned on all sides. This should take about 5 to 7 minutes.
Step Two
While the beef is cooking, chop the onion, tomatoes and jalapeno peppers. Peel and mince the garlic cloves. Cut the avocados in half, remove the seeds and scoop out the flesh. Set these aside for later.
Step Three
Once the beef is browned, add the chopped onions and garlic to the skillet. Cook these until they are soft and translucent. This should take about 3 to 5 minutes.
Step Four
Next, add to the skillet the chopped tomatoes and jalapeno peppers along with the ground cumin, chili powder, black pepper and salt to taste. Let this cook for about 5 minutes, stirring occasionally.
