What You’ll Need

  • 1 lb pound lean ground beef
  • 1 package taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup chopped green bell pepper
  • 12 taco shells
  • 1 1/2 cups shredded Cheddar cheese
  • 3/4 cup sour cream
  • 3/4 cup guacamole
  • For the pickled onions:
    • 1 large red onion, thinly sliced
    • 1 1/2 cups apple cider vinegar
    • 1/4 cup granulated sugar
    • 1 tablespoon salt
ALLERGENS: Gluten (in taco shells), dairy (in Cheddar cheese and sour cream)

Method

Step One

To prepare the pickled onions, first, slice the red onion thinly. Combine the apple cider vinegar, sugar, and salt in a bowl gradually blending until the sugar and salt have dissolved. Submerge the sliced onions in the mixture, making sure they are fully immersed. Leave the onions to absorb the pickling mix for at least an hour.

Step Two

While the onions are pickling, begin preparing the beef. Place a large skillet over medium-high heat, add the ground beef to the heated pan. Cook the beef, making sure to break it up until it’s fully browned and cooked through.

Step Three

After the beef is cooked, add in the taco seasoning, diced tomatoes, and chopped green bell pepper. Stir the mixture thoroughly to ensure the seasoning fully covers the beef. Continue to cook this mixture for about 5 more minutes, or until the bell peppers just begin to soften.

Step Four

With your beef filling prepared, warm your taco shells as directed on the package.

Step Five

Now, you are ready to assemble your tacos. Fill each taco shell generously with the beef mixture. Next, on top of the beef, add the shredded Cheddar cheese, a dollop each of sour cream and guacamole.

Step Six

Finally, retrieve your pickled onions from earlier. Drain them from their pickling solution, and add a generous amount on top of each taco. Your Beef Tacos with Pickled Onions are now ready to serve. Enjoy your meal!
