What You’ll Need

  • 1 tbsp of vegetable oil
  • 1 large red cabbage, thinly sliced
  • 2 Granny Smith apples, peeled and diced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups of beef broth
  • 1 cup of red wine
  • 2 tbsp of brown sugar
  • 2 tbsp of apple cider vinegar
  • 1 tsp of ground allspice
  • Salt and ground black pepper to taste
  • Chopped fresh parsley for garnish

Method

Step One

Begin by seasoning your beef chuck roast with salt and pepper according to your taste preference. After seasoning, heat the vegetable oil in a large pot over medium-high heat. Once the oil is hot, add the beef and sear it on all sides until it is brown. This process should take approximately 2-3 minutes per side. Once browned, remove the beef from the pot and set it aside.

In the same pot, add the sliced red cabbage, diced apples, chopped onion, and minced garlic. Sauté these ingredients together over medium heat until the vegetables begin to soften. This should take roughly 5 to 7 minutes.
