What You’ll Need

  • 2 medium-sized beetroots
  • 2 cups of multi-purpose flour
  • 2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of cinnamon powder
  • 2 large eggs
  • 1 and 1/2 cups of milk
  • 2 tablespoons of granulated sugar
  • 1 teaspoon of pure vanilla extract
  • Butter for pan frying

Method

Step One

Firstly, peel and grate the beetroots. You can use a food processor to speed up this process. Once grated, put to one side.

In a large bowl, combine the 2 cups of multi-purpose flour, 2 teaspoons of baking powder, 1/4 teaspoon of salt and 1/2 teaspoon of cinnamon powder. Mix these ingredients until well combined.

In another bowl, beat the 2 large eggs. Then add 1 and 1/2 cups of milk, 2 tablespoons of granulated sugar and 1 teaspoon of pure vanilla extract to the beaten eggs. Stir well until all of these elements are mixed together.

Next, combine the dry and wet mixtures together. Then add the grated beetroots and stir until everything is mixed well and forms a slightly thick batter.

Step Five

Now, heat up a pan and melt some butter in it. Once the pan is hot, pour a ladle of the beetroot pancake batter into the pan. Cook each pancake for about 2-3 minutes on each side or until they are nicely browned.

Step Six

Finally, serve your beetroot pancakes while they are still warm. Drizzle some syrup over the top and garnish with fresh fruits of your choice.
