What You’ll Need

  • 2 large Bermuda onions
  • 3 tablespoons of unsalted butter
  • 1 scant teaspoon of sugar
  • 2 tablespoons of all-purpose flour
  • 8 cups of beef broth
  • 1 cup of dry white wine
  • 1 sprig of fresh thyme
  • 1 bay leaf
  • 1 baguette
  • 2 cups of grated Gruyere cheese
  • Salt and pepper to taste

Method

Step One

Begin by peeling and thinly slicing the 2 large Bermuda onions.

Step Two

In a large pot, melt the 3 tablespoons of unsalted butter over medium heat. Add the sliced onions and the scant teaspoon of sugar to the pot. Stir until the onions are well coated with the butter and turn a deep, caramel color. This should take around 30 minutes.

Step Three

Sprinkle the onions with the 2 tablespoons of all-purpose flour. Continue to stir the onions for about 2-3 minutes, until the flour is well combined.

Step Four

Gradually stir in the 8 cups of beef broth and 1 cup of dry white wine. Keep stirring the mixture until all the components are well combined and starting to simmer.

Step Five

As the soup starts to simmer, add the sprig of fresh thyme and bay leaf. Allow the mixture to simmer for about 30 minutes. During this time, the soup will reduce a bit and the flavours will intensify.

Step Six

While the soup is simmering, cut the baguette into rounds and toast them until they are golden brown.

Step Seven

Preheat your oven broiler. Discard the thyme and bay leaf from the soup, then season the soup to taste with salt and pepper.

Step Eight

Ladle the soup into ovenproof bowls. Place a toasted baguette round on top each bowl, then sprinkle generously with the grated Gruyere cheese.

Step Nine

Place the bowls under the broiler for a few minutes until the cheese is melted and bubbly. Be careful not to let it burn!

Step Ten

Remove the bowls from the oven carefully, and serve your Bermuda Onion Soup hot. Enjoy!
