What You’ll Need

  • 2 large Bitter Gourds
  • 1 cup of Corn Flour
  • 1/2 cup of Rice Flour
  • 2 teaspoons of Red Chili Powder
  • 1/2 teaspoon of Turmeric Powder
  • Salt, to taste
  • Water, as required
  • Vegetable Oil, for deep frying

Method

Step One

Begin by washing the bitter gourds thoroughly. Slice them into thin round circles. Make sure to remove all the seeds while slicing.

Step Two

Once sliced, transfer all pieces into a bowl. Add enough water and salt to it. Mix everything well and keep it aside for about 15 to 20 minutes. This step is important because it helps to remove the bitterness from the gourds.

Step Three

After 20 minutes, squeeze out water from the slices. Try to remove as much water as possible. Discard this squeezed out water.

Step Four

Now, add red chili powder, turmeric powder, corn flour, and rice flour to the squeezed bitter gourd slices. Adjust the salt if needed. Mix everything evenly so that the slices are well coated with the flours and the spices.

Step Five

Heat vegetable oil for deep frying in a pan. Once the oil is hot enough, drop the coated bitter gourd slices into the oil carefully. Do not overcrowd the pan. Fry them on a medium flame until they turn crisp and golden in color. Stir occasionally for even browning.

Step Six
