What You’ll Need

  • 2 large bitter gourds
  • 1.5 pounds lean pork, sliced
  • 1 medium onion, chopped
  • 8 cups of water
  • 2 tomatoes, diced
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bullion cubes
  • 1 bundle of green onions, chopped

Method

Step One

Start by cleaning the bitter gourds. Cut them in half and scoop out the insides, removing all the seeds and pith. Slice them into thin half-moons and set aside.

Step Two

Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and minced garlic to the pot and sauté until they become translucent and fragrant.

Step Three

Add the sliced lean pork to the pot and stir-fry until it is no longer pink on the outside. This should take a few minutes.

Step Four

Add in the sliced bitter gourd and the diced tomatoes, then sauté for a few more minutes until the tomatoes are softened and the bitter gourd is slightly wilted.

Step Five

Pour in the 8 cups of water and add in the bullion cubes. Stir until the cubes are completely dissolved in the water.

Step Six

Season the soup with salt and black pepper, then lower the heat and let the soup simmer. It is ready when the bitter gourd slices are soft to the touch.

Step Seven

Just before serving, add the chopped green onions to the soup and give it one final stir. Serve the soup hot. Enjoy your Bitter Gourd Soup.
