What You’ll Need

  • 6 bone-in, skin-on chicken thighs
  • 1 cup of wildflower honey
  • 3 tablespoons of black mustard seeds
  • 2 tablespoons of olive oil
  • 1 large lemon
  • 6 sprigs of fresh thyme
  • Salt and black pepper to taste
  • 3 cloves of garlic, minced
  • 1 tablespoon of minced fresh ginger
  • 1 cup of chicken broth
  • 1 large onion, thinly sliced

Method

Step One

Preheat your oven to 375 degrees. Season the chicken thighs with salt and pepper to taste.

Step Two

In a large ovenproof skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken thighs, skin side down, and sear until the skin is crispy and golden brown, about 8-10 minutes. Turn the chicken over and cook for another 5 minutes.

Step Three

While the chicken is cooking, grate the rind from the lemon and then squeeze the juice. Combine the lemon rind and juice with the honey, black mustard seeds, minced garlic, minced ginger and a pinch of salt and pepper.

Step Four

Remove the cooked chicken to a plate for a moment. In the same skillet, add the sliced onion, cook until translucent and then add the chicken broth, scraping any bits off the bottom of the skillet.

Step Five

Place the chicken thighs back in the skillet, skin side up. Pour the honey and mustard mixture over the chicken. Intersperse the fresh thyme sprigs among the chicken pieces.

Step Six

Place the skillet in the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Step Seven
