Blackcurrant Ice Cream

Tex-Mex Flavors Meet European Classics

Craving something different, I decided to fuse my love for Tex-Mex with my appreciation for European cooking. The wonderful union of flavors inspired the creation of this exquisite Blackcurrant Ice Cream. The recipe reminds me of similar desserts such as sorbets and summer pudding, both incorporating a hearty amount of fruit in their composition. It also pairs beautifully with a variety of dishes like mantecadas, a Spanish sweet bread, or even a simple pound cake.

The Nutritional Punch of Blackcurrant

The main ingredient in this delightful ice cream is blackcurrant. This small yet powerful fruit is packed with nutrients like Vitamin C and antioxidants. According to a Healthline report, these tiny berries pack a punch when it comes to lowering inflammation, boosting immunity, and improving overall heart health.

Southern Charm with a Modern Twist

While enjoying this fascinating dessert, let’s not forget the key characteristic of Tex-Mex cuisine – innovation. The combination of creamy textures with the vibrant flavors of the blackcurrant mirrors the guiding philosophy of Southern cooking, where we are always adding a modern twist to traditional recipes. The use of heavy cream and half-and-half, also typical components in Southern recipes, adds a comforting richness that manages to make even ice cream feel like home.

In conclusion, whether it’s a hot summer day, a dinner with friends, or just a desire for something sweet and nutritious, this Blackcurrant Ice Cream recipe is sure to bring joy to your tastebuds. So, here’s an invitation to an exciting culinary experience: let’s whip up a batch of this ice cream and bring a fusion of Tex-Mex and European flavors to your table.

What You’ll Need

  • 2 cups fresh blackcurrants
  • 1.5 cups white granulated sugar
  • 1/3 cup water
  • 2 cups heavy cream
  • 1 cup half-and-half cream
  • 6 egg yolks
  • 1 teaspoon pure vanilla extract
ALLERGENS: Milk, Eggs

Method

Step One

Begin by washing the blackcurrants thoroughly. Once they’re clean, put them in a saucepan along with the sugar and the water. Place the pan on a medium heat and stir until the sugar has dissolved. Continue to simmer for about 10-15 minutes until the blackcurrants have broken down and the mixture has a syrupy consistency. Let the mixture cool for a while before sieving it into a bowl to remove the blackcurrant skins and seeds.

Step Two

In a separate saucepan, combine the heavy cream and half-and-half cream and heat until it’s hot but not boiling. In a different bowl, whisk the egg yolks together. Gradually pour the hot cream into the egg yolks, whisking continuously to prevent the eggs from scrambling.

Step Three

Once the egg and cream mixture is fully combined, return it to the saucepan and heat it on low. Continue to stir until the mixture thickens enough to coat the back of a spoon. Be sure not to let it boil or the eggs will curdle.

Step Four

Once the cream mixture has thickened, remove it from the heat and stir in the strained blackcurrant mixture and the vanilla extract. Mix well until fully combined. Allow the mixture to cool completely, preferably in the refrigerator for at least 2 hours.

Step Five

After the mixture is thoroughly chilled, churn it in an ice cream maker according to the manufacturer’s instructions. Once it has reached a soft-serve consistency, transfer it to a lidded container and place it in the freezer to harden.

Step Six

Allow the ice cream to sit at room temperature for a few minutes before serving it. Enjoy the delicious homemade Blackcurrant Ice Cream!
