Growing up in Louisiana, I was blessed with the rich mix of French cuisines and Creole flavors which is reflected in this stunning bowl of comfort. The ingenuity of using blue pea flowers, a nod to my French ancestry, not only lends a unique flavor but also a captivating blue hue to the soup. A feast for both the eyes and the palate!

Aside from its flavorful profile, the Blue Pea Chicken Soup is a powerhouse of health benefits. As you might know, blue pea flowers are rich in antioxidants that aid in combating aging and enhancing your overall health. Just as delightful, the turmeric included in the mix provides a significant range of benefits such as anti-inflammatory properties and immune-boosting characteristics.

What You’ll Need
- 1.5 lbs of Chicken breasts
- 1 tablespoon of Olive Oil
- 1 tablespoon Blue Pea flowers
- 1 large Onion, chopped
- 2 large Carrots, peeled and chopped
- 2 Celery Stalks, chopped
- 3 cloves of Garlic, minced
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Turmeric
- 6 cups Chicken Broth
- 2 cups Water
- 2 Bay Leaves
- 2 cups of fruit mix (choice of Blueberries, Pear, Cherries, etc.)
Method
Step One
Start by heating up the olive oil in a large pot over a medium heat. Add the chicken breasts, cooking each side for about 3-5 minutes until they are slightly browned. Once the chicken is cooked, remove it from the pot and set it aside.
Step Two
In the same pot, add the chopped onion, celery, carrots, and minced garlic. Sauté them until they soften, which should take around 5 minutes.
Step Three
Next, stir in the blue pea flowers, giving the mixture a good mix to ensure that the flowers are evenly distributed. Season the mixture with the salt, black pepper, and turmeric.
Step Four
Once the spices have been added, pour the chicken broth and water into the pot and stir well. Add the cooked chicken breasts back into the pot along with the bay leaves.
Step Five
Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes or until the chicken is cooked through and the broth is flavorful.
Step Six
After the soup has simmered, remove the bay leaves and add the fruit mix of your choice. Continue cooking the soup for another 5 minutes.
Step Seven
The Blue Pea Chicken Soup is now ready to serve! Ladle it into bowls while it’s still hot and enjoy a flavorful, nutritious meal.
